Zucchini Latkes
Serves 4
Ingredients
2 cups grated raw zucchini
½ cup yellow onion, grated
¼ cup celery leaves, chopped
3 green onions, thinly sliced
3 large eggs
1/3 cup all purpose flour
kosher salt and fresh pepper, to taste
3 tablespoons canola oil
Sour cream and applesauce, for serving
Directions
  1. Preheat grill griddle with griddle side up to 350 degrees for 10 minutes.
  2. Dry zucchini off with paper towels.
  3. Wrap onion in a double layer of paper towel and squeeze excess water out.
  4. In a mixing bowl stir together the zucchini, onion, celery and green onion.
  5. Stir in the eggs, flour and salt and pepper.
  6. Brush griddle with some of the oil.
  7. Drop zucchini mixture using a tablespoon per latke.
  8. Pat down tops to flatten a bit and cook for 2-3 minutes or until well browned.
  9. Flip over and cook 2-3 minutes more or until second side is well browned.
  10. Remove and repeat with any remaining mixture.
  11. Serve hot with sour cream and applesauce.
TIP: It is important to remove any excess moisture from the zucchini and onion, otherwise the patties fall apart and will not get crispy.
