Zucchini Latkes
Serves 4
Ingredients
2 cups grated raw zucchini½ cup yellow onion, grated
¼ cup celery leaves, chopped
3 green onions, thinly sliced
3 large eggs
1/3 cup all purpose flour
kosher salt and fresh pepper, to taste
3 tablespoons canola oil
Sour cream and applesauce, for serving
Directions
- Preheat grill griddle with griddle side up to 350 degrees for 10 minutes.
- Dry zucchini off with paper towels.
- Wrap onion in a double layer of paper towel and squeeze excess water out.
- In a mixing bowl stir together the zucchini, onion, celery and green onion.
- Stir in the eggs, flour and salt and pepper.
- Brush griddle with some of the oil.
- Drop zucchini mixture using a tablespoon per latke.
- Pat down tops to flatten a bit and cook for 2-3 minutes or until well browned.
- Flip over and cook 2-3 minutes more or until second side is well browned.
- Remove and repeat with any remaining mixture.
- Serve hot with sour cream and applesauce.
