EASY, DELICIOUS CORN BEEF AND CABBAGE

Ingredients
1 2-pound brisket corn beef, 1-1/2 in. thick
1 tbsp. dijon mustard
1/2 tsp. crushed garlic
pickling spice
4 wedges cabbage
4 bliss potatoes
1 cup baby carrots
1-1/2 cups beer
Directions
  1. Rub corn beef with Dijon mustard. Pour liquid from the package the corn beef came in into your rice cooker with the beer. Place rack in cooker.
  2. Cover the fat side of roast with a thick crust of pickling spice.
  3. Sprinkle with the crushed garlic.
  4. Close cooker and set for 50 minutes.
  5. When 50-minute cycle is over, add cabbage and remaining vegetables. Place lid back on and pressure cook for 10 minutes more.
  6. Serve with Dijon mustard and cider vinegar for the cabbage.
