CHOCOLATE SPOON BREAD

This delicious recipe is perfect served directly from your Command Performance Gold Casserole pan and topped with a dollop of freshly whipped cream. This Spoon Bread is sweet, cake-like, luscious and best eaten with a spoon!
Ingredients
1 stick (4 ounces) unsalted butter
4 ounces unsweetened chocolate
1/2 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
a pinch of salt
4 large eggs
1 teaspoon almond extract
1 cup granulated sugar
Directions
  1. Preheat the oven to 350°F.

  2. Butter a Command Performance Gold 8-inch casserole.

  3. Combine the butter and unsweetened chocolate in a heat-proof mixing bowl.

  4. Place the pan over a pot of simmering water or in the microwave, (cooking at 50% power in 20 second increments to avoid burning) and stir until melted.

  5. Remove the mixture from the heat and set it aside.

  6. In a separate bowl sift together the flour, cocoa, baking powder and salt.

  7. Using an electric mixer beat together the eggs, almond extract and sugar until thick and pale, about 5 minutes.

  8. Stir in the melted chocolate mixture and blend well.

  9. Finally, fold in the dry ingredients and mix until just combined.

  10. Pour the batter into the prepared pan and bake until set, about 45 minutes.

  11. Serve warm from the casserole pan.
