Cary & Main ages their syrup in charred Hungarian Oak barrels that previously aged rum. Barrels are racked and hydrated during the aging process, then the syrup is refiltered, adjusted for correct density and hot packed in glass. This aging process imparts a unique flavor and deep character to this classic maple syrup.
