Green Beans in Fresh Butter
Wolfgang Puck Green Beans
Makes 4 servings
Ingredients
1 pound string green beans
Salt
3 tablespoons unsalted butter
Freshly ground pepper
Preparation
  1. Cut the string beans in approximately 2-inch lengths, diagonally.
  2. Bring a large pan of heavily salted water to a boil.
  3. Add the beans and boil for 3 or 4 minutes, or until barely tender.
  4. Drain and refresh in iced water for 1 minute.
  5. Drain and dry well.
  6. When ready to serve, heat the butter in a sauté pan until it is foamy.
  7. Add the beans and toss in the butter for 1 or 2 minutes, until heated through.
  8. Season with salt and pepper to taste.
Presentation
Serve in a heated serving bowl or arrange attractively on each plate as an accompaniment to an entrée.
