| | | Green Beans in Fresh Butter
Makes 4 servings
Ingredients
1 pound string green beans
Salt
3 tablespoons unsalted butter
Freshly ground pepper Preparation
- Cut the string beans in approximately 2-inch lengths, diagonally.
- Bring a large pan of heavily salted water to a boil.
- Add the beans and boil for 3 or 4 minutes, or until barely tender.
- Drain and refresh in iced water for 1 minute.
- Drain and dry well.
- When ready to serve, heat the butter in a sauté pan until it is foamy.
- Add the beans and toss in the butter for 1 or 2 minutes, until heated through.
- Season with salt and pepper to taste.
Presentation
Serve in a heated serving bowl or arrange attractively on each plate as an accompaniment to an entrée.
