| Steamed Mussels Lazy Man Style Ingredients 48 mussels, with shells 2 tablespoons garlic, chopped 2 tablespoons fresh ginger, chopped 1 teaspoon vegetable oil 1 tablespoon curry powder 4 carrots, peeled and diced medium 3 cups carrot juice 2 teaspoons orange zest 2 teaspoons cornstarch 2 teaspoons water 48 orange segments 2 tablespoons scallions, sliced 2 tablespoons fresh cilantro, chopped Directions - Sauté garlic and ginger in vegetable oil.
- Add curry powder and lightly toast.
- Add carrots, carrot juice and orange zest.
- Add the mussels to the broth and steam.
- When mussels open, pull out and put on a sheet pan to cool.
- Strain off juice and vegetables and puree vegetables in blender.
- Put liquid back on the fire.
- Add cornstarch with water, whisk and bring to a boil.
- Add orange segments, scallions and cilantro.
- Pick mussels out of their shells and add to liquid.
- Put carrot puree into a bowl.
