Steamed Mussels Lazy Man Style
Ingredients
48 mussels, with shells
2 tablespoons garlic, chopped
2 tablespoons fresh ginger, chopped
1 teaspoon vegetable oil
1 tablespoon curry powder
4 carrots, peeled and diced medium
3 cups carrot juice
2 teaspoons orange zest
2 teaspoons cornstarch
2 teaspoons water
48 orange segments
2 tablespoons scallions, sliced
2 tablespoons fresh cilantro, chopped

Directions
  1. Sauté garlic and ginger in vegetable oil.
  2. Add curry powder and lightly toast.
  3. Add carrots, carrot juice and orange zest.
  4. Add the mussels to the broth and steam.
  5. When mussels open, pull out and put on a sheet pan to cool.
  6. Strain off juice and vegetables and puree vegetables in blender.
  7. Put liquid back on the fire.
  8. Add cornstarch with water, whisk and bring to a boil.
  9. Add orange segments, scallions and cilantro.
  10. Pick mussels out of their shells and add to liquid.
  11. Put carrot puree into a bowl.
