Basil Aioli
Ingredients
1 garlic clove
2 cups fresh basil leaves
2 tablespoons fresh lemon juice
2 large egg yolks
1 cup olive oil
1 teaspoon water
½ teaspoon kosher salt
pinch black pepper
Directions
  1. Place the garlic and basil into the mixing cup and pulse with Mixxo until both are well chopped but not minced.
  2. Add the lemon juice and egg yolks and process until well incorporated.
  3. While the machine is running, add the oil in a thin, steady stream and process until smooth.
  4. Add the water, salt, and pepper and process until thickened.
  5. ransfer to a jar, cover and refrigerate for at least one hour and up to one week.
