Almond Pesto
Ingredients
¼ cup toasted almonds
2 garlic cloves
2 cups fresh basil leaves
6 tablespoons extra virgin olive oil
½ teaspoon kosher salt
1 teaspoon freshly grated Parmesan cheese
Directions
  1. Place the almonds and garlic cloves in the mixing cup.
  2. Use the Mixxo to pulse until they are well chopped.
  3. Add the basil leaves and pulse until chopped.
  4. While the machine is running, add the oil and process until smooth.
  5. Add the salt and Parmesan cheese and process until combined.
  6. Cover and refrigerate until ready to use.
