Fast & Easy Cooker Method
PRO/FATS AND VEGGIES - LEVEL ONE

Wrap in lettuce cups and garnish with fresh cilantro, sour cream and a squeeze of fresh lime. Yum!
Ingredients
2½ pounds beef brisket
1 tablespoon beef broth
3 cups water
1 bay leaf
6 medium tomatoes, chopped
2 large onion, chopped
1 red bell pepper, chopped
6 garlic cloves, chopped
3 tablespoons fresh cilantro, chopped
Pinch of saffron, optional
½ teaspoon salt
½ teaspoon pepper
Directions
  1. Place brisket, broth, water, and bay leaf in the 8 quart pressure pot. Lock lid into place. Bring to high pressure (regulator setting #2) over high heat. Lower heat to medium-low and cook for 40 minutes. Release pressure.

  2. Remove brisket from pot and shred. Return to pressure pot along with tomato, onion, bell pepper, garlic, cilantro, saffron, salt and pepper. Lock lid into place. Bring to high pressure (regulator setting #2) over high heat. Lower heat to medium-low and cook for 10 minutes. Release pressure
