Carbos and Veggies - Almost level one
You'll need my Fast and Easy Cooker (or any pressure cooker) to make this recipe. Imagine, rice in under 20 minutes! You can easily make this recipe Level One by substituting vegetable broth or water for the chicken stock. If you use water, add some extra salt! This tastes delicious when you squeeze a little fresh lemon or lime right before serving.
Ingredients
1 small onion, chopped
1 clove garlic, minced
¼ cup fresh parsley, chopped
1½ cups long-grain brown rice
1 teaspoon salt
1 sprig thyme
3½ cups chicken stock
Juice from 1 lemon
1 cup broccoli florets
Directions
  1. Place all the ingredients, except broccoli, into the 8 quart pressure pot. Lock lid into place.

  2. Bring to high pressure (regulator setting #2) over high heat. Lower heat to medium and cook for 8 minutes. Turn off heat and let stand for 10 minutes without releasing pressure. The pressure will slowly release as it stands.

  3. Open lid and add broccoli. Lock lid into place. Bring back to high pressure (regulator setting #2) over high heat. Lower heat to medium and cook for 1 minute. Release pressure.

  4. Toss rice and vegetables together. Top with a squeeze of lemon or lime and serve.
