| | | INDIVIDUAL BAKED ALASKA Serving Size: 6 Ingredients 6 1-inch thick slices Angel Food cake (your own or store bought) 6 scoops excellent quality ice cream, any flavor 6 egg whites (absolutely no yolk or grease of any kind) 1½ cups white sugar blowtorch or oven broiler Directions Cake Preparation - Several hours before you wish to serve dessert, arrange the slices of Angel Food cake onto 6 oven-proof dessert plates.
- Top each slice with a scoop of ice cream.
- Place directly into the freezer.
Meringue Preparation - Place egg white and sugar into a large metal bowl.
- Place this over the top of a pot of simmering water to create a double boiler, or just use a double boiler if you wish.
- Whisk the egg whites occassionally until they are clear and warm and all of the sugar is dissolved. (You are not trying to beat air into them at this point, just trying to dissolve the sugar and warm them.)
- Now transfer to a stand mixer or use a hand mixer.
- Beat for about 5 minutes until shiny, stiff, silky peaks are achieved.
- Spoon some of the meringue over the ice cream scoops, covering all of the ice cream.
- Swirl it and make it as fancy or as simple as you like. (It can also be piped with a piping bag - this type of meringue is very close-grained silky, and creamy.)
- Now return to the freezer till ready to serve. You can keep them in the freezer just like this for a day or two.
- When ready to serve, brown the meringue with the blowtorch or place it under a hot broiler til golden brown. This takes seconds with a blowtorch and only minutes under a broiler.
- Serve at once. The ice cream will not be melted at all - it is insulated by the meringue!
