Apple Cinnamon Pancakes
Yields: 6 servings
 
Ingredients:
 
1 cup flour
1 tbsp sugar
2 tsp baking powder
1/4 tsp cinnamon
a pinch of salt
1 egg
1 cup of milk
2 tbsp melted butter
1 cup shredded apple
 
Directions:
  • Preheat oven to 350.
  • Sift the flour, sugar, baking soda and cinnamon together in a large mixing bowl; set aside. Whisk the eggs and milk together in a small bowl and then add to the dry ingredients; mix well. Let sit 5 minutes.
  • Divide the butter into 6 pieces and place 1 piece in each better baker cup.
  • Put the pan into the oven for 3 minutes and then carefully remove and sit on heat resistant surface.
  • Use a basting brush and spread some of the melted butter over the center of the cup.
  • Whisk the batter and put a scant 1/4 cup into each cup.
  • Divide the apples among the cups and use a wooden spoon handle to gently push the apples around the perimeter of the cup. Top with the remaining batter (about 2 Tbs per cup).
  • Place into the center of the oven and bake 30 minutes.
  • Remove from oven, place a cookie sheet or cooling rack on top, flip the pan over and firmly shake to release the pancakes.
  • Fill with apple pie filling, shredded cooked hashbrowns, scrambled eggs or butter and syrup and serve immediately.
