Crab Stuffed Pacific Salmon
Ingredients:
2 Fillet of salmon (use 6-7 inch long thickest part of the fillet)
1 cup Crab or Pollock
1 Egg
1/4 cup bread crumbs
1/4 cup finely diced onion
Old Bay seasoning
Sauce:
1 cup Mayo
2 tbsp horseradish
1 tbsp spicy mustard
1/4 cup capers
- Slice salmon fillet lengthwise starting from and finishing about 1/2 an inch from either end right down the middle, being careful not to cut right through.
- Spoon about 1/2 mixture into the pocket you've made into the fillet.
- Pat down the stuffing mixture and place in fridge for 1 hour.
- On a medium grill, place salmon filet on direct heat. If you have a tight sealing lid, put in place...if not you can wrap the salmon in tin foil being careful not to wrap the top of the filet too tightly.
- Allow to cook for 11-13 minutes depending on the thickness of the filet.
- Combine all ingredients for the sauce in a bowl, and spoon as desired over finished fillet.
- Sprinkle with Old Bay Seasoning.
