Piccolini® Mini Wheels Pasta with Chicken and Veggies
A fun recipe for the whole family!  The petite size pasta wheels, optional chicken, and infusion of fresh vegetables makes this a great addition to your weekly menu.

Yield: 4-6 Servings
Prep Time: 30 minutes
Cook time: 20 minutes
 
Ingredients:
1 box Piccolini® Mini Wheels
4 Tbspn extra virgin olive oil, divided
2 cups frozen green peas 
1 pound chicken breast, diced (optional)
5-6 slices (about 1 cup) bacon, cut into strips
2 cups cherry tomatoes, halved
1 cup fresh mozzarella cheese, cubed (may substitute shredded)
2 Tbspn lemon juice
Salt to taste

Directions:
  1. Bring a large pot of water to a boil.
  2. Cook Piccolini® Mini Wheels for 6 minutes; drain and drizzle with 2 tablespoons of oil. Spread Mini Wheels on a cookie sheet or baking tray to cool.
  3. Bring another medium pot of salted water to a boil.
  4. Boil green peas for five minutes, drain and cool.
  5. Heat a medium skillet over medium heat. Add remaining oil and chicken. Cook for 4-5 minutes or until cooked through; season with salt and pepper. Allow chicken to cool.
  6. Cook bacon in same skillet until crispy; drain fat and allow to cool.
  7. Combine all ingredients and allow to rest 30 minutes before serving.
