Piccolini® Mini Farfalle with Corn and Tomatoes
A simple yet delicious pasta dish that could satisfy anyone's hungry appetite.  The sauteed tomatoes and fresh basil add an aroma that will bring the whole family to the table.  

Yield: 4-6 Servings
Prep Time: 15 minutes
Cook Time: 15 minutes
 
Ingredients:
1 box Piccolini® Mini Farfalle
2 lbs plum tomatoes
2 Tbspn extra virgin olive oil
1 Tbspn chopped onion
1 can (15.5 oz) Baby corn (drained)
1 cup Parmesan cheese, grated
4 leaves basil, chopped
Salt to taste
Pepper to taste

Directions:
  1. Place the fresh tomatoes in boiling water for 30-60 seconds to blanch; peel the skin, remove the seeds and chop.

  2. In a medium skillet, sauté onion in olive oil over medium heat for 5 minutes.

  3. Cook the Piccolini® Mini Farfalle according to package directions.

  4. Add tomatoes to skillet and simmer for 3 minutes; season with salt and pepper.

  5. Add corn and simmer for 2 minutes.

  6. Drain pasta and toss with sauce.

  7. Stir in cheese and basil before serving
