Fried Strawberries with Cinnamon Vanilla Cream

Ingredients:
8 fresh strawberries
4 cups all purpose flour
3 T. fresh ground cinnamon
3 T. sugar
3 eggs
4 oz. chocolate ganache
4 cups peanut oil
 
Directions:
  1. Mix flour and 2 T. cinnamon in a bowl.
  2. Mix sugar and 1 T. cinnamon in a separate bowl.
  3. Roll strawberries, one at a time, in cinnamon flour, then eggs, then back in the flour.
  4. Heat the oil in your Tim Love Collection fryer.
  5. Drop breaded strawberries carefully into oil, and fry for 1 ½ minutes each, or until golden.
Cinnamon Vanilla Cream
 
Ingredients:
½ qt. heavy whipping cream
1 t. cinnamon, ground
½ cup brown sugar
½ t. vanilla extract
 
Directions:
  1. Mix all ingredients together and whip until soft peaks.
  2. Serve with whipped cream, drizzle with chocolate ganache, and sprinkle with cinnamon sugar.
Chocolate Ganache
 
Ingredients:
1 pint heavy cream
3 ¼ lbs. semi-sweet chocolate chips
 
Directions:
  1. Remove from heat and stir until smooth.
  2. Reduce ingredient portions equally for dessert sauces.
