Roasted Tomato and Spinach Quiche
 
Yield: 6 servings
 
Ingredients:
5 roasted and diced roma tomatoes
1 cup spinach
½ white onion
8 eggs whisked
1tsp paprika
1tsp cayenne Pinch salt and pepper
 
Directions:
  1. Whisk eggs in mixing bowl.
  2. Sautee onions until tender, then add tomatoes, spinach.
  3. Add mixture to eggs.
  4. Add paprika, cayenne, salt and pepper.
  5. Add all into cooked pie pan or cast iron skillet
  6. Bake at 350 degrees until center is firm.
