Tomato Basil/Mozzarella Pizza
Ingredients:
4 Roma tomatoes (diced medium) 6 Basil leaves(chiffinade)
2 Fresh Mozzarella balls (in liquid thinly sliced)
3 Garlic cloves chopped
1 Small white onion diced
Salt and pepper, to taste
Olive Oil as needed
Preparation:
  1. In sauté pan add oil and sauté white onions until translucent.
  2. Add garlic and cook briefly.
  3. Add tomatoes and cook until liquids cook down to desired consistency.
  4. Add salt and pepper, to taste
Dough Ingredients:
5 cups flour
1.25 cups warm water
½ oz. active dry yeast
¼ cup olive oil
1 tablespoon salt
2 teaspoon. pepper
½ cup rosemary chopped

In an electric mixer with dough hook, add flour, olive oil, salt, and pepper. Add yeast to water and stir. Add water mixture to flour and mix until smooth. Remove from mixer and kneed rosemary into dough for 1 minute.

Assembly of Pizza:
  1. Preheat oven to 400 F.
  2. Roll dough out into pizza pan.
  3. First, top with tomato sauce.
  4. Place mozzarella slices on top of sauce.
  5. Sprinkle with basil chiffonade.
  6. Bake until crust is brown and crispy.
