Chili Stir Fried Green Beans
Ingredients
2 pounds Fresh green beans, washed and trimmed
1.5 cups water
Salt
1 tablespoon peanut or sesame oil
1 tablespoon ginger, peeled and minced
2 tablespoons sweet chili paste (found in any Asian Market)
2 tablespoons soy sauce
1 tablespoon fresh cilantro, chopped
Directions:
  1. In pressure cooker, add the beans and water and a little salt.
  2. Close the lid, bring to high pressure, stabilize and cook for 3 minutes.
  3. Release pressure using cold-water release method.
  4. Open lid and place in a bowl.
  5. Drain any remaining excess water in the pot.
  6. In the same pot, heat the oil over high heat.
  7. Add the beans and the ginger.
  8. Cook for about 2 minutes, add the sweet chili, soy sauce and cilantro.
  9. Heat through and serve.
