Beer Braised Short Ribs

Ingredients
¼ cup olive oil
2 cloves garlic
2 pound beef short rib
1 cup dices yellow onion
½ pound small whole cremini mushrooms
½ pound carrots cut into large chunks
3 sprigs of fresh thyme
Salt
Pepper
12 ounce bottle of dark beer
1 tablespoon of minced parsley
Directions:
  1. Generously season the short ribs with salt and pepper.
  2. Heat the olive oil in the pressure cooker, add the garlic and sauté.
  3. Add the seasoned short ribs and brown them on all sides.
  4. Add the carrots, onions, mushrooms, and thyme.
  5. Stir in the beer.
  6. Lock the lid in place, bring to high pressure.
  7. Stabilize the pressure and cook for 20 minutes.
  8. Release the pressure.
  9. Stir in parsley and serve.
